Champagne Cédric Bouchard...
Bonjour à tous,
Suite à quelques demandes de la part de membres du site; je me permets de vous signaler la mise en disponibilité des vins suivants...
Je dois souligner mon enthousiasme pour les vins uniques de Cédric. Particulièrement intéressant, selon moi, pour les amateurs de Bourgogne; ainsi que ceux de Champagne bien évidemment.
Roses de Jeanne Lieu-dit “La Haute-Lemblée” Millésime 2005
Blanc de Blancs –Monocépage Chardonnay (5 variétés plantées) -Monoparcelle de 0,0118 ha
Densité: 8000 pieds/ha –Taille de la vigne en Chablis –Production Annuelle: 1200 bouteilles
IP: 136,75$ (UVC 6)

Blanc de Blancs –Monocépage Pinot Blanc (rare et ancien cépage champenois)
Monoparcelle de 0,2107 ha –Densité: 8000 pieds/ha –Taille de la vigne en Chablis
Production annuelle: 1000 bouteilles

Inflorescence Lieu-dit “Val Villaine” Vendange 2007
Blanc de Noirs –Monocépage Pinot Noir –Monoparcelle de 1,49ha
Densité: 8000 pieds/ha –Taille de la vigne en Guyot simple –Production annuelle: 8900 bouteilles
IP: 81,50$ (UVC 6)
Voici quelques commentaires au sujet de Cédric par Antonio Galloni du Wine Advocate (Issue #180):
“The explosive, kaleidoscopic Champagnes of Cedric Bouchard are some of the most compelling wines coming out of the region today. Quite simply, this set of new releases left me speechless and literally shaking my head in awe. Readers should do whatever they can to experience these magnificent wines. Bouchard farms just under three hectares of vineyards. There are two ranges; the Inflorescence wines are made from vineyards owned by Bouchard's father, while the Roses de Jeanne wines are made from vineyards Bouchard owns himself. The vineyards are cropped to yields that would be considered miniscule in any region in the world, but are shockingly low compared to the average in Champagne, where high yields are prevalent. Because of the low yields, the wines reveal a very fine and subtle mousse. The wines are made from hand harvested fruit, crushed by foot and fermented with natural yeasts. Bouchard prefers stainless steel, as he believes the neutrality of steel allows for the maximum amount of expression of his philosophy, which is single-vineyard,single vintage and single-variety bottlings. The wines are neither fined nor filtered and are disgorged with no dosage. Unfortunately the wines do not carry a disgorgement date on the label, although I am told that will be changing next year.”

*** Three stars indicates a champagne of the highest class, demonstrating a completeness and expression of character that places it among the very finest wines within its context. Needless to say, these wines are uncommon.
** Two stars means that this wine is outstanding in its class, showing a marked quality, expression and refinement of character.
La Haute Lemblée 2005: **(*)
"—I have a very high opinion of the 2004, and it remains to be seen as to what will happen to the 2005 as it settles down and sheds some of its puppy fat. Where the '05 might have the edge, though, is in the finish: intensely soil-expressive and deeply resonant, it persists on the palate with great length, feeling sophisticated and complete."
Le Bolorée 2005: ***
"The inaugural vintage of Bouchard's old-vine pinot blanc has proved well worth the wait. Pinot blanc is relatively rare in Champagne, and even more so when it's made from 40-year old vines. This is one of the most highly original champagnes that there is—it definitely doesn't taste like chardonnay, and its elegant purity and confident, old-vine depth are unlike any other pinot blanc champagne I've tasted...It's an extremely subtle and demanding wine, one that is best appreciated in a setting that allows you to focus your full attention on it."
Inflorescence Val Vilaine 2007: **
"...it does seem that Inflorescence has been getting consistently more soil-expressive, and with this vintage, it has perhaps turned a sort of corner, breaking into Roses de Jeanne territory. This is tensely poised, racy, crunchy in its vivid red fruit tones, unfolding on the palate with a clear, precise delineation of flavor and consistently intertwined with a stony, almost flinty minerality...I can't get enough of it..."
